What is roti sai mai?
Roti sai mai is two things sold together: a stack of thin, soft roti sheets and a bag of spun-sugar floss. Sai mai means "silk thread," and the floss is exactly that, fine strands in pinks, greens and browns. You take a sheet, pull off a pinch of floss, roll it up and eat it straight away.
The dessert is associated above all with Ayutthaya. The recipe is said to have been brought to the old Ayutthaya kingdom by Indian Muslim traders, who sold it at roadside booths. The roti is often colored green with pandan and sprinkled with sesame.

Lamunn: roti sai mai in Bangkok's malls
Lamunn (ละมุน, meaning soft or gentle) sells two formats. The first is a take-home set: six roti sheets with a bag of floss, which it says serves one or two people, in a traditional version or a pandan version. The second is a ready-to-eat box of nine rolled pieces. The ready-to-eat box is sold only at the counter, because the brand says the floss would melt before a delivery arrived.

- Siam Paragon, fourth floor, in the Eatelier food zone. Siam Kempinski Hotel Bangkok is linked to Paragon by a covered walkway.
- Central Embassy, lower ground floor, in the Eathai food hall. Park Hyatt Bangkok occupies the Central Embassy tower and connects directly to the mall.
- EmQuartier (basement level) and Emporium (fourth floor), both on Sukhumvit Road at Phrom Phong.
- ICONSIAM, sixth floor, on the Thonburi riverbank. The Peninsula Bangkok runs boats for its guests to ICONSIAM.
- One Bangkok (B1) and Park Silom (ground floor).
- Banthatthong, on Banthatthong Road near Chulalongkorn University, the same road as Somboon Seafood Bantadthong, so dessert can follow a curry-crab dinner.

Roti sai mai also turns up at small independent shops and market stalls. Google Maps lists, for example, a Bang Oen Aroi roti sai mai shop (the brand's name refers to Victory Monument) on Ratchaprarop Road near the Din Daeng triangle in Ratchathewi, and small sellers in markets such as Tao Poon and Khlong Toei. Independent sellers change hours and locations more often than mall counters, so check a recent listing or their Facebook page before crossing town.

Ayutthaya, the old capital north of Bangkok, is a popular day trip, and roti sai mai is its best-known sweet. The best-known shops cluster around U Thong Road in the Pratu Chai area of the old city. On Google Maps, Roti Sai Mai Abeedeen is the most reviewed, with more than 2,000 ratings, and several neighbors sell the same dessert, including Bangdin Roti Saimai and Bang Muad Roti. Ayutthaya sits outside the City of Bangkok, so treat it as a day-trip add-on rather than a Bangkok errand.

Which should you choose?
If you are staying in central Bangkok and want to try roti sai mai once, a Lamunn counter in a mall you are already visiting is the simplest answer: the ready-to-eat box needs no assembly and the take-home set makes an easy gift for someone in the city. If you are planning a day in Ayutthaya's temples anyway, buying a bag from one of the U Thong Road shops is part of the outing. The independent sellers are for those who happen to be nearby.

- Eat the floss soon. Lamunn says its floss melts too quickly to survive a delivery ride once rolled, so keep the bag sealed and wrap each roll just before eating.
