Baipai Thai Cooking School has taught Thai cooking since April 2002 from an open-air, two-storey Thai-style wooden house in a garden in Chatuchak, in the quiet north of the city. Classes are taught in English, every student cooks at an individual, fully equipped station, and the school is accredited by Thailand's Ministry of Education.
It suits beginners and families first: there is a family class designed for adults and children aged 7 and up, and no experience is needed. It is a half-day commitment, since the school sits about 30 minutes from downtown by its own estimate, and students are collected by the school's shuttle from the Major Ratchayothin cinema complex near BTS Ratchayothin.
How a class runs
Each class starts with the ingredients: a walk through the school's organic herb garden or, on some mornings, a market visit. Teachers show the traditional way of making coconut cream from scratch and finish with a seasoning taste test, then students cook four dishes at their own stations with the teacher's guidance. What you cook becomes the meal, and recipe booklets go home with you.
What you cook
Menus rotate by day and are published on the school's calendar, so you can pick a date for the dishes you want. Recent sets have paired Massaman curry with chicken, stir-fried pork with holy basil and a glass noodle salad, or pad Thai, stir-fried chicken with cashew nuts and a spicy grilled beef salad, with starters and desserts such as crispy golden cups, spring rolls and water chestnuts in coconut milk. Halal-friendly and vegetarian options are available.
Groups and private classes
A class takes at most 12 people per workshop, and with two workshops the school can run 24 students a session. It arranges private classes with a choice of menus, and team-building sessions for groups of 12 to 60.
