Chef's Table by lebua is a contemporary French restaurant on the 61st floor of State Tower, built around an open kitchen whose centerpiece is a custom Molteni stove framed in marble and brass. Every table has a clear view of the cooks, executive chef Vincent Thierry leads the brigade, and the restaurant holds two MICHELIN stars in the 2026 Thailand guide.
It suits diners who enjoy watching a kitchen at work as much as the meal itself, and a special-occasion dinner where the skyline stays in the background. Chef's Table is one of the restaurants of The Dome at lebua, at the top of lebua at State Tower on Silom Road in Bang Rak, and lebua puts Saphan Taksin BTS station about five minutes' walk from the tower.
The chef
Thierry grew up in the Loire among vineyards, goat's cheese and orchards, cooked in MICHELIN-starred kitchens across France and opened Caprice in Hong Kong. He describes his cooking as contemporary French cuisine served with simplicity, with few ingredients on each plate, and the chefs present each course as it reaches the table. lebua says the restaurant has held two stars since 2020.
Two menus
The Signature Menu gathers classic French dishes in seven courses; the current one moves from Alaskan king crab and Brittany blue lobster to Challans duck, and ends with the Vanille Bleue tart with ruby pomelo and white beer sorbet. The shorter Creation Menu is the bolder, less formal choice, with dishes such as sea bream ceviche with Sologne caviar and veal cheek with molten Parmesan. Both come with an optional wine pairing, and the MICHELIN Guide singles out the cheese trolley, which includes produce from a local farm.
Before you book
Reservations need a deposit, which comes off the final bill, and plans can change without charge only up to 72 hours ahead. Children aged 7 and older are welcome with an adult. The dress code is smart elegant: collared shirts and long trousers for men, and no T-shirts, sleeveless tops, shorts or caps for anyone. Large bags and luggage cannot be taken up, and there is no storage.

Sirocco is lebua's open-air Mediterranean restaurant under the golden dome, and Pink Bar, a Champagne bar with live piano on the same 61st floor, is walk-in only and for guests aged 20 and over.
