Gaggan is chef Gaggan Anand's Bangkok restaurant, and it bills itself as a food theatre with progressive Indian cuisine: a long tasting menu served as a performance, with music, lighting and a good deal of back-and-forth between the kitchen and the guests. It holds one MICHELIN star and stands at No. 3 on the Asia's 50 Best Restaurants 2026 list.
It is for diners who want an evening out as much as a meal and are happy to be drawn into the act; anyone looking for a hushed, formal dinner should book elsewhere. The restaurant is on Soi Sukhumvit 31 in Watthana, along the Sukhumvit corridor, and guests driving themselves park at the A-List Building.
The performance
The restaurant describes the evening as a multi-sensory journey of touch, sound, light, smell and taste, plus a sixth element it calls surprise. Expect loud music, dishes that play with what you think you are looking at, food served into your hands and at least one plate you are invited to lick. The MICHELIN Guide describes seating at an L-shaped counter, with courses unfolding in acts under shifting lights and a pulsing soundtrack.
The cooking
Anand, who is from India and has built his career in Bangkok, aims to land sweet, sour, salty and spicy in the same bite, and says he wants spice that you will not regret later. The kitchen talks about ingredient purity, seasonality and sustainability, and the chef writes that he once planned to leave Thailand for Japan before starting again here.

The restaurant introduces its staff by name on its website, from executive chef Rydo and head chef Fabio to head pastry chef Ti and the reservations manager, Katya, which says something about how much of the show depends on the whole crew rather than the chef alone.
