About
Sorn cooks the food of Southern Thailand, and the MICHELIN Guide calls it the world's first three-MICHELIN-star Thai restaurant. Chef-owner Supaksorn 'Ice' Jongsiri grew up in his grandmother's kitchen in Nakhon Si Thammarat, and he built Sorn after travelling through all 14 southern provinces, learning recipes and techniques from farmers, fishermen, home cooks and old local restaurants.
This is the table to plan a Bangkok trip around, for diners who want to understand one regional Thai cuisine in depth rather than sample the whole country. Getting in takes organization, since tables are released a month at a time. The restaurant occupies a restored house with a garden path on Soi Sukhumvit 26, in the Khlong Toei district off the Sukhumvit corridor.
The menu
The Classic Menu is a long progression built on southern seafood and produce: Tapi River prawn with jasmine rice and prawn fat, Phuket lobster and blue crab, Andaman squid, and a crab stick with mud crab roe and chili paste. The meal then turns to what the restaurant calls the Thai way of sharing, with charcoal-steamed southern jasmine rice, condiments and several sides such as roti with a southern green curry of beef, before southern sweets and tea or coffee. A separate Seasonal Menu is being introduced alongside it.
Time as an ingredient
The kitchen works with techniques that take time and fire: charcoal cooking, clay pots, stone grinding and traditional rice steaming. Chili pastes are pounded by hand with a pestle and mortar, and the cooks try to use each ingredient as completely as possible rather than only the prized cuts.
The house and the cellar
The interiors take their cue from the South's forests and craft traditions, with antique cooking utensils, woven details and Thai art, including pieces from Chef Ice's own collection. The cellar holds more than 500 labels chosen for classic regions and producers, with pairings built to stand up to the spice, acidity and smoke of the food.
Recognition
Beyond its three MICHELIN stars, Sorn is No. 12 on the Asia's 50 Best Restaurants 2026 list. The name comes from Sorana, a Sanskrit expression for a person who relies on their own strength, rises to prosperity and shares it with others.
